Avocado Chicken Salad Wrap - 30 Days of Wellness

Good Morning! Welcome to your day and here's a delicious and nutritious recipe to make for lunch, brunch or a dinner. Enjoy!




Ingredients


▢ 2 cups cooked chicken, shredded (I use rotisserie)

▢ ¼ cup plain Greek Yogurt

▢ ¼ cup mayonnaise

▢ 3 Tablespoons onions, finely chopped

▢ 3 Tablespoons celery, finely chopped

▢ 2 teaspoons lemon juice

Sea salt and freshly ground black pepper to taste

▢ 1 avocado, seeded, peeled, diced

▢ Romaine hearts or bib lettuce about 16 leaves

▢ Green or red seedless grapes, diced (optional)


Instructions


1. Add chicken, yogurt, mayo, onion, and lemon juice to a bowl and mix well to combine.

2. Season with sea salt and pepper, to taste. Stir in avocado. (add in optional ingredients as well at this time)

3. Serve in cold, crisp lettuce cups.


I like to drizzle Kosterina Chocolate Balsamic Vinegar on top.


Prep Time: 5 minutes | Cooking Time: 10 minutes | Total Time: 15 minutes
